I know this recipe is a little higher in carbs, but it is very filling that using 9 Net Carbs for 1 1/3 cup is worth it to me. Especially during these cold months.
1/2 cup Onion, chopped
1 large Celery Stalk, chopped
1 Garlic Clove, minced
1 TB Butter
4 cups Vegetable Broth (or water and boullin)
1/2 cup Kroger Lentils, dried
1/2 tsp Basil, dried
1/2 tsp Rosemary dried
1/2 tsp Oregano, dried
1/4 tsp Black Pepper
10 ounces Jennie-O Turkey Ham, diced
1 can(14.5 oz) diced tomatoes, undrained
In a small bowl add the basil, rosemary and oregano, using your fingers pinch the spices until finely crushed.
In a large saucepan, saute the onion, celery and garlic in the butter until tender.
Stir in broth, lentils and all the spices. Bring to a boil. Reduce heat; Cover and simmer for 20 minutes. Add the ham and cover the pot again and simmer 10 minutes longer. When Lentils are tender stir in the can of tomatoes until heated through.
Each serving which is 1 1/3 cup consists of: 156 calories; 7g fat total; 3g Sat Fat; 46mg Cholesterol; 75mg Potassium; 15.6g Carbs; 6.5g Fiber; 3.6g Sugar; 14.9g Protein; NET CARBS 9.1g
